Bangers and Mash (NOT a gluten-free item)

I’m equally excited about this one! True Irish sausages are nearly impossible to find here, but these pan-roasted fresh pork bratwursts are wonderfully similar—and bratwurst happens to be a favorite of mine.

They’re smothered in a rich caramelized onion sauce and served with creamy potato mash finished with buttery sautéed scallions (technically called “champ” in Ireland). It’s topped with a bit of aged white cheddar for melty deliciousness and served with a side of sautéed sugar snap peas.
