🍤 Malaysian Coconut Shrimp Soup (GF)

This one is truly a labor of love....and is now the ultimate fan favorite! I was introduced to this soup nearly two decades ago by a friend who had lived in Malaysia and Thailand and learned it from the locals. It’s a beautifully light yet deeply satisfying soup made with coconut milk, fresh lime zest, lemongrass, ginger, plenty of Thai basil and cilantro, and cumin seeds (they’re the special touch!), along with red and green bell peppers, carrots, and gently poached shrimp. Served with a side of aromatic, spice-infused jasmine rice. (Gluten-free. Dairy free. Contains fish sauce and shrimp.)
